Eating Good

If you read Amy's Blog "http://oregonodyssey.blogspot.com/." You know that we are on a wedding diet and it is going good. I have lost a total of 5 pounds and all the weight i put on from i trip to Iowa. Going into this diet i was not to excited thinking that i would be let down not because we have almost cut out all of are RED MEAT. However 3 weeks in and only having had red meat 2 times i am fine. also i have felt better then normal

I think the only reason we are doing so good, comes from the fact that we are trying new things with chicken, Salmon, and recently Pork, and these thing called vegetable steamers they are GREAT. i never thought i would be putting Vegetable and great in the same sentence.

First of all i don't know why i am in bold i can not get it to go back i don't know so just bare with it

I am going to share with you this Great pork Recipe that me and Amy found in My men's fitness magazine.

what you need
2 pork chops (6 oz each)
1 Apple cored peeled sliced into thick wedges . we used 2
1/2 Tbsp chipotle sauce they suggest Gova we could not find that one
1/2 Tbsp Dijon
1/2 Tbsp Honey
1/2 Tbsp olive oil
1/2 cup apple juice
1 Tbsp butter
Salt and pepper

How to make it
Mix together the chipotle sauce, mustard and honey. set aside. Heat oil in a skillet over medium heat. Sprinkle the chops with salt and peeper and cook, undisturbed until a crust forms. brush the uncooked sides of the chops with the chipotle glaze, flip and brush the cooled sides. Add the apples to the pan cook 3 or 4 min.

2. Lower the heat and add the juice. Simmer for 4 to 5 min until the chops are cooked all the way through. Remove them season the apple mix with more salt and pepper and add the butter pour the apple mix over the pork chops

Eat with 1 large peeled sweet potato, boiled until soft and then mashed with bilk and butter divide it between the two plates

per serving 300 calories 19 grams protein 22 g carbohydrates 14 grams of fat 6g of saturated 2 grams of fiber 135 milligrams sodium.
